This coffee holds a special place for us. When we first released this Popayán Honey in 2025, it quickly became one of our team’s favorites—and judging by the response, one of yours too. We loved it so much that we kept thinking about it long after it sold out, and we’re genuinely excited to have the opportunity to bring it back this year.
Grown high in the mountains of Popayán, Colombia, this honey-processed Castillo comes from smallholder producers who focus on careful cherry selection and intentional processing. Drying the coffee with the mucilage intact allows natural sugars to deepen sweetness while maintaining a clean, vibrant cup profile.
This year’s release is everything we loved the first time around: fruit-forward, expressive, and beautifully balanced. It’s the kind of coffee that feels both exciting and easy to return to—one we’re proud to brew, serve, and share again.
